Born in Argentina and now based in Spain, Mimi Pallette is a singer-songwriter whose music bridges the intimacy of folk storytelling with the grit and soul of alt-country.

Singing from an early age and later finding her voice through guitar and piano, Mimi crafts songs that balance tenderness with quiet strength. Her work draws on nature, folklore, and the beauty found in contrast — stories that feel both deeply personal and universally human.

Before dedicating herself to music full-time, Mimi worked as a pastry chef, most recently in a five-star hotel on Ireland’s western coast. It was there — between long shifts and the stillness of rural life — that the first songs for her debut album, Milk & Whiskey, began to take shape.

A trained musician and dedicated vocal coach, Mimi approaches songwriting with both technical depth and emotional honesty.

Her debut album, Milk & Whiskey, was recorded in April 2025 at the legendary Eastcote Studios in Notting Hill and will be released in January 2026 on Pastiche Records.
